If you think that Chinese food consists of American protein and veggies covered in some sauce thickened with corn starch while tossed in a single wok with a fortune cookie and rice to accompany it, well you are right about the rice being authentic (at least in parts of China… believe it or not huge regions of China don’t eat much rice because it wasn’t grow-able until modern farming and distribution techniques).

Anyway this simple breakfast/brunch item that is authentic Chinese is tasty and really simple to prepare.
